First, they are manufactured on-site or in close proximity to the monastery. Second, the monastic community is engaged in management and all aspects of the operation. This clearly reflects both the subordinate relationship with the beneficiary monastery and the relationship between the culture of the enterprise and monastic life. CLAN COYOTE

CLAN COYOTE

Clan Coyote’s handcrafted Sotol Coyote is equal parts art and science. Relying on centuries of experience, it is one of the few drinks in Mexico that retains its ancestral method of preparation. It is a meticulous and time-consuming process. Every bottle of Sotol Coyote contains the distilled nectar of one 15 year-old plant that provides a rich bouquet with unmatched flavor.

Sotol is a Mexican ancestral distillate, with an identity of its own. A relative of both tequila and mezcal, the main difference is the botanical family to which each one belongs to. Unlike those products, Sotol is not distilled from agave, but from the Sotol bush of the family Asparagaceae that grows wild in the desert. The wild-grown, prickly evergreen plants can take as long as 15 years to mature, storing vast amounts of natural energy before they are ready to be harvested by the ‘jimadores’. One large, magnificent plant will produce but a single bottle of Sotol Coyote. The main Sotol growing regions of Mexico are found in the dry desert lands of Chihuahua, Durango, and Coahuila.

On December 26th 1989 the famous Delirium Tremens was born, and the Pink Elephant was up and ready to conquer the world.  The particular character and unique taste of Delirium Tremens comes from the use of three different kinds of yeast. Its original packing, which resembles cologne ceramics, and the colorful label contribute to its success.

Dogfish Head Craft Brewed Ales

Dogfish Head Craft Brewed Ales

The story of Dogfish Head began in June of 1995 when we opened Dogfish Head Brewings & Eats, the first state’s first brewpub opened in the resort beach community of Rehoboth Beach, Delaware. The plan was to bring original beer, original food, and original music to the area. Not only was Dogfish Head Delaware's first brewpub, it was the smallest commercial brewery in America. Our very first batch, Shelter Pale Ale, was brewed on a system which essentially was three little kegs with propane burners underneath. Brewing 12-gallon batches of beer for a whole restaurant proved to be more than a full time job. When the doors to the pub first opened, we brewed three times a day, five days a week! The one benefit to brewing on such a small system was the ability to try out a myriad of different recipes. We quickly got bored brewing the same things over and over - that's when we started adding all sorts of weird ingredients and getting kind of crazy with the beers! Off-centered ales, for off-centered people - that's what they do at Dogfish Head! Whether its weird ingredients, super-strong extreme beers, or crazy, made-up styles, you can be sure that a beer from Dogfish will challenge your perceptions of what beer is supposed to be! Most of Dogfish Head beer is bottled and kegged in Milton, Delaware brewery, but they also have a small brewery in Rehoboth Beach, Delaware, which is where they do all of their experiment batches. Dogfish Head brews are distributed across the United States.

Elysian Brewing

Elysian Brewing

Three-time Large Brewpub of the Year at the Great American Beer Festival, Elysian Brewing Company operates four neighborhood restaurants and a production brewery in Seattle, Washington. Known both for classic styles and for flexibility and innovation, Elysian has brewed over 350 different recipes since opening in 1996. While Elysian’s brewers use a variety of unusual ingredients, they are seasonally notorious for their pumpkin beers. Each year Elysian hosts the Great Pumpkin Beer Festival, where dozens of different pumpkin beers are poured, some of them from giant pumpkins. Our first Seattle location, a 220-seat beer hall and our main brewery, opened in 1996 on Capitol Hill, Seattle’s most populous neighborhood. In 1997 Elysian was chosen to operate a pub and small brewery at Gameworks—a large entertainment complex owned by Universal Studios, Dreamworks & Sega. Elysian left this partnership in 2002 upon expiration of the five-year contract. A short year later Elysian opened Tangletown, an 80-seat neighborhood brewery/bistro. With a 3-bbl pilot brewery, Elysian TangleTown acted as the brewers’ test kitchen, fueling the creative fires and helping cement Elysian’s reputation as Seattle’s top brewpub. Elysian Fields, opened in August 2006. Perched next to Seattle’s two sports arenas, Fields seats 400 and packs the house at lunch and on gamedays. Fields has since become an innovation center for our brewers where new beers are brewed each week on the 7bbl brewing system. Rounding out the Elysian restaurant locations, which all reflect the different character of each Seattle neighborhood they are a part of, Elysian Bar is located in downtown Seattle. Opened in 2014, Bar features finely crafted Northwest beers, hand-built cocktails and beautiful scratch made Northwest-inspired cuisine. In the fall of 2011, Elysian opened our 35,000 square foot production facility in the heart of Seattle’s Georgetown neighborhood. Referred to as Airport Way (referencing the street on which it sits), this facility currently features a 60-barrel brewhouse and 20 quadruple-sized 240-barrel fermenters. In addition to traditional fermentation, we also currently house two foeders from the esteemed Heitz Cellar’s Winery and a variety of whiskey and wine barrels for special projects. Beginning in early 2016, Airport Way will finalize the expansion into the north building, adding another 33,000 square feet intended for increased storage, office spaces, and dedicating 14,000 square feet of capacity for our wood-aged beer program.

Founders Brewing Company

Founders Brewing Company

Mike Stevens and Dave Engbers both had steady jobs when they decided to chase their dreams and open a brewery–which meant writing a business plan, quitting their jobs, and taking out giant loans. They figured if you’re going to live life, you ought to live it hard, without regrets. After some initial challenges, due to making well balanced but unremarkable beers, we were on the verge of bankruptcy. It was at this point that the original Founders team decided to brew the kind of beer that got them excited about brewing in the first place: complex, in-your-face ales, with huge aromatics, bigger body, and tons of flavor. The Founders Family, a group of passionate beer enthusiasts, has grown around this simple philosophy: “We don’t brew beer for the masses. Instead, our beers are crafted for a chosen few, a small cadre of renegades and rebels who enjoy a beer that pushes the limits of what is commonly accepted as taste. In short, we make beer for people like us.” We at Founders Brewing Company have been lucky to evolve into one of the highest recognized breweries in the United States. Since 2011, Ratebeer.com has ranked us as the 2nd best brewery in the world (we were 4th best in 2010), and we have several beers listed in the top one hundred beers of the world on Beeradvocate.com. We were the winner of four medals at the 2010 World Beer Cup, two medals at the 2010 Great American Beer Festival, and one medal at the 2012 World Beer Cup. We are proud to be doing what we are doing, and we give great thanks to our many customers and credit to our staff for whom we continually work to reinvent and provide world-class beers.

Foundry Distilling

Foundry Distilling

Brewer-Distiller Alliance is a collaboration with several of the best breweries in the industry to make whiskey from the recipes of their well-known beers. The brewers produce wort, which is then fermented, distilled and aged at the Foundry. Each expression will be a one-time, limited release.

Starches are converted to sugars, which brewers refer to as wort and distillers call wash. The product is then fermented to create beer. Whiskey requires a couple of additional steps. The beer is distilled to increase the proof and the distillate is then barrel-aged to create whiskey.

The Foundry team has been collaborating with various breweries for many years, and we came up with an idea. Why don’t we use the recipes for some of our favorite beers and further process these into whiskey? The Brewer-Distiller Alliance was born.

Picture yourself enjoying a bottle of the beer and a glass of whiskey, both of which started their life as the same liquid!

Ginja 9 Cherry Liqueur

Ginja9, the Portuguese sour cherry liqueur that has delighted for generations in Portugal, is now available in the U.S. marketplace as part of that celebration. The name derives from “ginja”, the Portuguese word for “sour cherry”, and the number 9, which represents love, eternity and peace according to numerology.

This traditional cordial dates back to an early 17th century, a recipe created by Galician monks who infused sour cherries in alcohol for 12 months, and lightly sweetened it with sugar. This concoction was an immediate success and recipes have been passed on through generations as home recipes. Centuries later, the liqueur became commercially available in Portugal, where it has been served as a treasured national spirit.

Goose Island Brewing Company

Goose Island Brewing Company

When the first Goose Island Brewpub opened its doors in 1988, domestic, mass-produced beer was deeply ingrained in Midwestern culture. The craft beer industry was still in its infancy. In his travels across Europe, beer-lover John Hall had enjoyed a distinctive local brew in each region he visited. Hall was convinced that Midwesterners could produce beers as good or better than those he’d tasted in his travels. Living on the shore of the largest system of fresh water on the planet Earth, in a city with rapidly evolving tastes – John decided that his hometown, Chicago, would be the ideal place to do just that. The key to building interest in craft beer was to allow consumers to watch the brewing process – while providing them with the experience of enjoying a wide variety of distinctive beers that had been produced on-site. Goose Island’s brewers set to work crafting a diverse selection of unique beers – and on Friday, May 13, 1988 the Goose Island Brewpub was born. It turned out that John was right; Chicagoans palates evolved rapidly once Goose Island’s Brewpub opened its doors and introduced the city to distinctive craft beer. By 1995, the brewpub had become so popular that John Hall decided to open a larger brewery and bottling plant to keep up with demand. Finding still more room for growth, in 1999 Hall opened a second Goose Island Brewpub just a stone’s throw away from historic Wrigley Field. Today, Goose Island continues to brew an innovative selection of over 50 craft beers at the brewpub, the best of which are then bottled at our Fulton Street brewery.

Great Divide Brewing Co.

In 1993, when Denver’s craft beer scene barely existed, Brian Dunn set out to found what would eventually become one of America’s most decorated and celebrated craft breweries. Brian’s dream of brewing commercially became reality in 1994. The brewery started small and in the beginning Dunn was the only full-time employee…brewing, bottling and selling to accounts all in the same day.  As the brewery grew, the beer spoke for itself.  Dunn’s beers were balanced, flavorful and representative of a lifestyle that is uniquely Colorado.  While Great Divide’s ethos may be globally-inspired, our beers are distinctly Denver. Since 1994 we’ve brewed all sorts of exciting beer styles, added lots of brewing capacity and we’ve assembled a great staff.  In 2001, we bought our building – which used to be an old dairy processing plant – and set out for over a decade of exponential growth. Thanks to our 45 hardworking, creative and passionate employees, Great Divide has grown into what it is today: winner of 17 Great American Beer Festival medals, recipient of 5 World Beer Cup awards, 14th in Ratebeer.com’s 2012 “The Best Brewers in the World” and 7th in Beer Advocate’s 2010 “All-Time Top Brewers.”

Brewed in Holland since 1615, Grolsch has held its own for nearly 400 years. When the new Grolsch brewery was built, the Master Brewers demanded that the original source of natural, soft spring water remain in use. So they built a 7km long water pipe to keep drawing water from the original source to ensure the original Grolsch taste remained intact. While it now embraces modern ways of brewing, Grolsch is still the unique, bold character that stood out from the crowd all those years ago.

LA FÉE ABSINTHE

LA FÉE ABSINTHE

In 1998, George Rowley discovered absinthe while living in the Czech Republic. At the time, absinthe was a near-forgotten relic and was only available in a few Bohemian bars. Inspired by his experience, George and his company Bohemia Beer House Ltd (now BBH Spirits) took on the task of setting the legal precedent for absinthe, opening the international absinthe market today.

After soon discovering the UK never imposed a ban on absinthe, working alongside Trading Standards, George was able to secure permission to import due to the creation of a document called EU Council Directive 88/388/EEC. Creating this watershed document set the legal precedent for all future absinthe in Europe and the international market which now includes the United States. George Rowley held his UK launch in London on November 1998, the product being a modern Czech absinth, absinthe spelled without the ‘e’, and introducing to the market the now popular modern ‘sugar and burn’ ritual. In May 1999, the campaign to source a genuine pre-ban absinthe and restart distilling in France began when George contacted Marie-Claude Delahaye, world-renowned expert and historian on the category.

THE RESURRECTION While reviewing the terms of the 1915 French ban, it was discovered that the French had prohibited the selling of absinthe in France, but not the distillation of it. This would signal the rebirth of traditional French absinthe, distilled with Grand Wormwood (Artemisia absinthium). All this pioneering work was carried out by George and Marie-Claude at the Paris distillery, leading up to the introduction of the first traditionally distilled absinthe in France, La Fée Absinthe Parisienne. After a year of investigation, research and development, the very first order of La Fée Absinthe Parisienne was placed on May 1, 2000. The iconic eye motif has made La Fée the benchmark brand within the surging absinthe category.

Lagunitas Brewing Company

Lagunitas Brewing Company

From points distant and beyond we all converged on Petaluma in 1993 and '94 with an unenunciated desire to be more than we were before. The core of Lagunitas came from Chicago, St Louis, Memphis, Walker Creek, and the highlands of Quincy. The Chicago contingent initiated the brewing and the gravitational effect of its suchness did the rest. We all loved the beer but the mission was larger than the ordinary joy of a hoppy-sweet quaff. It was driven unseen by an urge to communicate with people, to find our diasporidic tribe, and to connect with other souls adrift on a culture that had lost its center and spun its inhabitants to the four winds to wander lost and bereft with a longing to re-enter the light. Beer, we have learned, has always been a good lubricant for social intercourse! The Lagunitas Brewing Co. was not so much an act of ordinary "foundling" as it was willed into being by the unspoken desire of supportive beer-lovers in Northern California after which they continued to nurture their creation and urged us forward to fulfill the unifying needs of that same beer-loving diaspora from coast to coast and beyond. It is good to have friends!

Lindemans

Lindemans

Seven generations ago, in 1809, the Lindemans family owned a farm in Vlezenbeek near Brussels. They decided to intensify Lambic brewing activities during winter, when less farm work had to be done. The farm produced wheat and barley, the raw materials of the Lambic. Due to the growing success of the Lambic, the brewery became more important and consequently, in 1930, the farm-activities were stopped. In 1978, Lindemans started the production of Faro, after a period during which it almost disappeared from the market. The Framboise was launched in 1980 and due to the success of the fruit-beers, they created 2 new beers: Cassis (black current beer) in 1986 and Pecheresse (peach beer) in 1987. In 1991 the Lindemans family decided to build a new brewery next to the old one to meet the growing needs of the market without a loss in quality. A dedication to perfection has resulted in numerous accolades and awards. And in 1985, beer expert Michael Jackson exclaimed the Lindemans Kriek as one of the five best beers in the world.

Magic Hat Brewing Company

Magic Hat Brewing Company

The saturnalian saga of the Magic Hat Brewing Company began in 1978 in a Goddard College bathtub, where future brewmaster Bob Johnson first cultivated his maniacally obsessive interest in making “better beer with bigger flavor.” After fifteen years in various non-ale trades, Bob returned to this first fermentational love and made the decision to go pro on Martha’s Vineyard, an island sadly bereft of breweries. It was then, in a moment of supreme serendipity, that Fate sent him off to an accidental meeting on a random Burlington street with future Magic Hat president Alan Newman. Once both neighborhood acquaintances and coworkers at Seventh Generation, an environmentally friendly cleaning product company, the two had crossed paths many times but hadn’t talked for ages. Light pleasantries were exchanged, and upon hearing of Bob’s plans, Alan offered to help him open a brewery in Burlington. Before you could pour a pint, the two were road tripping through the Pacific Northwest, crash-studying the industry and scheming with a New England brewer to bottle Bob’s very first original ale. Seeking some mash tuns and tubes they could call their own, the pair moved into an abandoned Burlington factory in 1994, finally settling into a much larger (and currently expanding) facility near Lake Champlain’s Bartlett Bay in 1997.

Created in 1884 by Mr. Auguste Maurin in Le Puy. An Italian born artist later created the infamous icon of the green devil as the label for Maurin Quina. A sweet white wine fortified with an infusion of wild cherries and quinine in a neutral grape spirit, with measured amounts of cherry brandy, lemon and cherry juice added. MIEL DE TIERRA MEZCAL

MIEL DE TIERRA MEZCAL

Produced in the Mexican state of Zacatecas, which is much farther north than Oaxaca, where the center of mezcal production is. The distillery uses virgin, local oak in order to impart honey flavors and further tame the wild, agave character of the spirit. The agaves crafted here are not smoked and show a much more stately character to the wild, smoky spirits made further south in Oaxaca.

Casa Miel de Tierra follows recipes that have been handed down for generations. These preserve the raw flavors of the ingredients used in mezcal making: the sweetness of the agave and the robustness of the white oak.  The end result establishes a different kind of mezcal, one that dares to replace the strong and smoked flavors of classic mezcals (which only interfere with the purity of its true taste) with the naked essence of the very best ingredients used in its crafting. What is left behind is an extremely smooth distillate, with remarkable wooden notes and exquisite aroma.

SAVE THE BEES: For every bottle sold, Miel de Tierra is committed to share a portion of the profits to the conservation of wild honeybees in rural Mexico.

Moretti

In 1859, Luigi Moretti founded his "Beer and Ice Factory" in Udine, Italy, in the region of Friuli. Udine was a very quiet little town in Northern Italy. The Udine townsfolk lived industrious lives, dedicated to traditional trades and handicrafts. When Luigi Moretti founded the brewery, the Friuli region was still annexed to the Austro-Hungarian Empire so there were very strong patriotic sentiments felt among the town's people. It was in this difficult political climate (in the same years as the famous battles of San Martino and Solferino) that thirty-seven-year-old Luigi Moretti, looked to the future with courage and hope and decided to build his beer factory. Born into a wealthy family of merchants, Luigi Moretti already had a well-established business in the wholesale trade of cereals, liquors, foodstuffs and of course beer, but he could never have imagined when he founded his little factory how much it would grow. Five generations later the Moretti name still graces the label of the authentic Italian beer across the world.

Really good beer. Our folly is also a near-constant tinkerering with our company practices to make them more sustainable. Employee-owned since 1996. Wind powered since 1998. Striving to honor nature at every turn of the brewery. Tastes great, Less landfilling. As well, a folly takes inspiration. Within our beers, you’ll meet a few friends of ours who inspire New Belgium. Orval

Orval

Throughout the long history of Orval, there has probably always been a brewery at the monastery. Various facts corroborate this idea: topographical references on old drawings, a detailed description of production left by a Franciscan visitor three hundred years ago, and an area called the "hop-field" very close to the monastery. Brewing beer was customary in these areas little-suited to vine-growing. Beer was first and foremost considered for its nourishing properties: it was called "liquid bread." The origins of this distinctive beer can be attributed jointly to Mr. Pappenheimer and to the Belgians, Honore Van Zande and John Vanhuele who were working in the brewery at the same period. They were daring; their combination of production methods is nowhere else to be found. Several of these methods, such as infusion brewing and "dry-hopping" are English. The result is a beer with characteristic aroma and a taste owing more to the hops and yeasts than to the malts.

Great canned beer? The term has been an oxymoron for craft beer lovers used to getting their full-flavored beers from bottles only. When Dale decided to turn his restaurant into a brewpub in 1999, he had no idea that what started out as a small side project would turn into a huge success. Customers were diggin’ the beer, and wanted more.  In 2002, Dale decided it was time to start packaging his beer. And he felt there was no better package for his big craft beer than a CAN. In November of 2002, we launched the “Canned Beer Apocalypse” by putting our 3-dimensional Dale’s Pale Ale in a can. And so began our unCANny story. 10 years later we’re still rockin’ our craft beer in cans!

Saint Arnold Brewing Company, located in Houston, is Texas’ Oldest Craft Brewery. Our goal is to brew world class beers and deliver them to our customers as fresh as possible making them the best beers in Texas and Louisiana. Our customers are beer lovers - people that appreciate great, full-flavored beers. Our small crew does everything at the brewery: brew the beer, filter the beer, keg the beer, bottle the beer, sell the beer and drink the beer. For us, this is a passion, not a job. We believe that this comes through in the beers we make. Our beers have soul. We brew several different beers; some are year round, some are seasonal and a few are single batch brews. They are available in bars, restaurants, grocery stores, liquor stores and warehouse stores throughout Texas and Louisiana. Our first keg of beer was shipped on June 9, 1994. Founded by Brock Wagner and Kevin Bartol, we chose Houston because, other than living here, this was the largest city in the country that did not have a microbrewery. Brock was a longtime homebrewer and had considered opening a brewery as far back as college, although that was quickly dismissed as a silly idea. Seven years after graduating, Brock revisited the idea, enlisted Kevin’s help and the brewery was off and running. Kevin has since left the business after a bitter battle. (Just kidding - but don’t you wish people wrote that when it was the truth?).

Sierra Nevada Brewing Co.

Sierra Nevada Brewing Co.

In 1979, Ken Grossman began building a small brewery in the town of Chico, California. His goal: to brew exceptional ales and lagers. Today, the Sierra Nevada Brewing Co. is considered the premier craft brewery in the United States. And the beer? Critics proclaim it “Among the best brewed anywhere in the world.” Ken’s passion for brewing began when a friend showed him the basics of home brewing. Using homemade equipment, Ken began brewing five-gallon batches of beer on his own, and soon became a proficient home brewer. In 1976, after studying chemistry and physics at Butte Community College and California State University at Chico, Ken opened his own store, The Home Brew Shop. There, he supplied Chico’s home-brewing community with equipment, materials, and advice, but dreamed of opening his own brewery. Two years later, it was time to make the dream a reality. Ken and co-founder Paul Camusi cobbled a brewery together from dairy tanks, a soft-drink bottler, and equipment salvaged from defunct breweries. Though the equipment was secondhand, they created a first-rate microbrewery. The ingredients were premium, including the copious quantities of hops that would become the brewery’s trademark. An avid backpacker, Ken named the new company for his favorite hiking grounds- the Sierra Nevada mountains. Finally, on November 15, 1980, the Sierra Nevada Brewing Co. brewed the first batch of what would soon become a landmark in American craft brewing: Sierra Nevada Pale Ale. To this day, the Sierra Nevada Brewing Co. remains true to its roots. Ken is still personally involved in every aspect of brewery operation. Most importantly, the Sierra Nevada commitment to quality remains the same. Premium ingredients and time-honored brewing techniques make Sierra Nevada ales and lagers truly exceptional beers.

St. Bernardus has brewed dark and blond abbey ales since 1946.  Located in the most remote corner of West Flanders, Belgium, a beer is made that fancies most beer lovers.  St. Bernardus is the legacy of two trappist monasteries, one which gave it its name, the other its beer.  In 1934, Trappist monks transformed a farm in West Flanders called “Refuge Notre Dame de St. Bernard” into a cheese factory.  Shortly after WWII, the Trappist Monastery St. Sixtus in Westvleteren gave its beer license to the cheese factory in West Flanders.  The brew master from Westvletern became a partner in the brewery and brought along the recipes, the knowledge, and the St. Sixtus yeast strain.  In 1992 the license came to end, but the same beers are now brewed under a new name: St. Bernardus.

Tres Papalote Mezcal

Tres Papalote Mezcal

Our expert Maestro Mezcalero supervises each part of the Tres Papalote® Mezcal production. His extensive knowledge of the process has been passed on from generation to generation.

The cupreata agave plant can only be found in the mountains, traveling by foot or on a donkey, and must reach a specific maturity before it can be cut, which is approximately seven years. Once the agave is brought down from the mountain on carts, the pina (the heart of the plant) is then extracted by the Master Cutter, placed in a large fire pit in the ground and roasted.  When the Maestro determines that the agave is sweet and tender, it is then crushed by a large stone wheel attached to a central axle that is pulled around a circular stone wheel by a horse or a donkey. During this process, the sweet sap from the pina is extracted and when the specific consistency is reached, it becomes ready for fermentation.  The agave is then placed in aged wooden barrels, allowing the natural fermentation process to take place. The barrels are carefully guarded so that the proper temperature is maintained.

Following fermentation, the final step is distillation. The liquid is distilled two to three times and during this process, it is carefully monitored by the Maestro Mezcalero.

Widmer Brothers

Widmer Brothers

It began in 1979 when home brewing was legalized in Oregon. Having trouble finding beer in the U.S. that they liked to drink, brothers Kurt and Rob Widmer began making beer for themselves and their friends. After quitting their jobs in 1984, the Widmer brothers decide to turn their hobby into a vocation and open their own brewery. They pulled all of their resources together and built the Widmer Brewing Company in NW Portland. The brothers started by brewing Altbeir, meaning “Old Beer” in German, and a Weizenbier, their interpretation of a filtered wheat beer. Asked by the owner of the local Dublin Pub for a third beer for him to serve, the American-Style Hefeweizen was born by leaving the Weizenbier unfiltered resulting in a cloudy appearance. The Widmer Brothers Brewing Co., renamed in 1990, now resides in North Portland and continues to make one of America’s most popular wheat beers, the American-style Hefeweizen.

Woodchuck Cider

Woodchuck Cider

A long time ago, way back in 1990, there was a little winery in the town of Proctorsville, Vermont. Back then, we made our living producing a variety of apple wines, something not many wineries do. We also made a little cider called “Vermont Old-Fashioned Hard Cider” – not the most catchy name, yet pretty darn appropriate. The Vermontiest of Vermonters are sometimes called “woodchucks” and this seemed like a pretty good name for our newest small-batch, Vermont-based cider. As you may know, the new Woodchuck cider tasted pretty darn good, and it quickly found distribution. Soon, our winery-turn-cidery was struggling to meet the demand for the cider. The early bottling line didn’t help either. Throughout all of Woodchuck’s years, a lot of things have changed. What’s even more surprising is the stuff that’s stayed the same. Like our cider recipes. We’ve figured out smarter ways to get them in bottles, but the ingredients and taste are exactly the same. More importantly, many of the same folks from the little Proctorsville Winery still make Woodchuck today.
